Water with low mineral content, generally called soft water, easily brings out the essence of tea and is suitable for brewing tea. 2. Water without disinfectants: If the water contains disinfectants such as "chlorine", it can be filtered with activated carbon before drinking. Water with high oxygen content: Water with a high air content is beneficial for tea aroma volatilization and has a stronger taste. Control of bitterness and astringency: At high water temperatures, bitterness and astringency will be stronger; at low water temperatures, bitterness and astringency will be weaker. Therefore, tea with too much bitterness and astringency can be improved by lowering the water temperature. For tea with too much bitterness and astringency, in addition to the water temperature, the steeping time should also be shortened; to achieve the required concentration, the former must increase the amount of tea or extend the time, while the latter must increase the amount of tea.
